Blueberry Crumble Bars

Makes 9:

  • 5 cups oats
  • ½ cup plain flour
  • 1½ cups light brown sugar
  • 1½ cups Vitalite / other vegan spread
  • ½ teaspoon salt
  • 1 tsp cinnamon
  • 500g blueberries, fresh or frozen
  1. Preheat the oven to 190°C / gas mark 6.

  2. In a large bowl, mix with hands to the consistency of rough breadcrumbs:

    • 5 cups oats
    • ½ cup plain flour
    • 1½ cups light brown sugar
    • 1½ cups vegan spread
    • ½ teaspoon salt
    • 1 tsp cinnamon
  3. Place half of the crumble mixture in the bottom of a lined glass dish. Use wet hands to press it down, then bake for 15 minutes.

  4. Meanwhile, slice 500g blueberries into halves.

  5. Spread the blueberries over the cooked bottom crust and top with the remaining crumble mixture.

  6. Bake for 25 minutes, until the berries are bubbling and the topping is golden brown.

  7. Let cool before slicing into bars.
