Millet Cauliflower Mash

  • 1 cup millet
  • 1 medium head cauliflower
  • 1 tsp mustard
  • ½ ground pepper

Wash millet, wash and chop cauliflower, and place both in a medium sauce pot.

Add 2½ cups water (or stock) and bring to a boil; add ½ tsp salt, cover, and turn down to a simmer for 20 minutes, until millet is soft. When done, use a potato masher and blend together with:

  • 1 tsp mustard
  • ½ ground pepper
