Serves 2
Heat 1 tsp coconut oil in a large pan over medium-high heat.
Slice 2 bananas and chop a handful of pecans.
Once oil is very hot, arrange bananas in pan. Fry for 2-3m on each side, or until golden. Add pecans halfway through.
Whisk together maple syrup with 1 tbsp water.
Remove pan from heat and pour maple mixture over banana.
Scoop bananas into serving bowls before sprinkling with cinnamon and dessicated coconut.
Note: the maple syrup can be replaced with 1 tbsp honey and a splash of lemon juice.
