Sweet Potato & Corn Chowder

Serves 6

  • ½ tsp cinnamon
  • 3 cloves garlic
  • 1 onion
  • 2 cups of vegetable stock
  • 2 medium sweet potatoes
  • 1 leek
  • 1 bunch of kale / spinach
  • 3 cups of frozen corn
  1. Dice 1 onion and sauté in a large saucepan with 1 tbsp cooking oil over med/low heat until softened.

  2. Meanwhile:

    • Peel 2 medium sweet potatoes and cut into 1.5cm cubes
    • Wash and slice 1 leek
    • Mince 3 cloves garlic
  3. Add:

    • garlic
    • sweet potatoes
    • ¼ tsp salt
    • ¼ tsp pepper
    • ½ tsp cinnamon
  4. Add 2 cups vegetable broth and 3 cups water, cook 15m or until potatoes are soft. Add leek and cook 2m.

  5. Puree with hand blender

  6. Add bunch kale / spinach, 3 cups frozen corn and cook until greens are softened.
