Pesto Pasta

Serves 4

  • 500g pasta
  • 1 courgette
  • 120g basil
  • 75g finely grated vegan parmesan (Tesco)
  • ⅓ cup / 75ml extra virgin olive oil
  • ⅓ cup / 75ml water
  • ½ cup nutritional yeast
  • 4 garlic cloves
  • 1 tsp salt
  1. Blend:

    • 1 courgette
    • 120g basil
    • 75g finely grated vegan parmesan
    • ⅓ cup / 75ml extra virgin olive oil
    • ⅓ cup / 75ml water
    • 4 garlic cloves
    • 1 tsp salt
  2. Cook 500g pasta in plenty of boiling water according to package instructions.

  3. Drain the pasta, then stir in the pesto and ½ cup nutritional yeast. Heat over very low heat until warmed through.
