Serves 4:
Make the dressing by combining in a small food processor:
Cook 115g soba noodles according to package instructions. Add 454g frozen edamame to a bowl, pour boiling water over and leave to thaw.
When cooked, drain and rinse the noodles under cold water. Transfer to a large bowl and toss with a drizzle of extra-virgin olive oil.
Chop and add:
Toss until well combined, then serve.
