Orange-Maple Miso Noodles

Serves 4:

  • 3 tbsp light miso
  • 2 tbsp rice vinegar
  • 1 tbsp toasted sesame oil
  • 1 tbsp tahini
  • ¼ cup (60ml) orange juice
  • 1 tsp maple syrup
  • 115g soba noodles
  • Extra-virgin olive oil
  • 454g frozen edamame
  • 1 red pepper
  • ½ cucumber
  • 1 carrot
  • 4 spring onions
  • ¼ cup coriander
  • Sesame seeds
  1. Make the dressing by combining in a small food processor:

    • 3 tbsp light miso
    • 2 tbsp rice vinegar
    • 1 tbsp toasted sesame oil
    • 1 tbsp tahini
    • ¼ cup (60ml) orange juice
    • 1 tsp maple syrup
    • 1 tbsp water
  2. Cook 115g soba noodles according to package instructions. Add 454g frozen edamame to a bowl, pour boiling water over and leave to thaw.

  3. When cooked, drain and rinse the noodles under cold water. Transfer to a large bowl and toss with a drizzle of extra-virgin olive oil.

  4. Chop and add:

    • The thawed edamame
    • 1 red pepper, diced
    • ½ cucumber, seeds removed and diced
    • 1 carrot, julienned
    • 4 spring onions, finely chopped
    • ¼ cup coriander, chopped
    • Sesame seeds
  5. Toss until well combined, then serve.
