In a large bowl, mix well with a spoon:
- 2 cups oats
- 1 cup sugar-free peanut / almond butter (about 320g)
- 3 tbsp maple syrup
- 4 tbsp dessicated coconut
- 1 tsp vanilla extract
- zest of 1 orange
- Juice from 1 orange (approx 4 tbsp)
- Handful of dark chocolate chips
Roll the mixture into 20 balls and refrigerate for 30m.
Store in an airtight container in the fridge for up to 5 days.
