Sour Cream

Makes 1 cup:

  • 1 cup cashews
  • ½ cup almond milk
  • 2 tbsp lemon juice
  • ½ tsp apple cider vinegar
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ¼ tsp sea salt
  • ¼ tsp white pepper

AT LEAST 3 HOURS PRIOR: soak 1 cup cashews in boiling water.

Drain and rinse the cashews, and blend together with:

  • ½ cup almond milk
  • 2 tbsp lemon juice
  • ½ tsp apple cider vinegar
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ¼ tsp sea salt
  • ¼ tsp white pepper

Refridgerate for at least 1 hour before serving.

You'll need a good, high-speed blender to blend your cashews fine enough. Or blend a third at a time in a nut grinder, adding a little milk if necessary (and depending on your grinder) to keep them moving around.
