Serves 6:
- 2 cans kidney beans
- 1 medium red onion
- 1 each large red and yellow pepper
- 1 cup parsley
- 1 tbsp olive oil
- 2 cloves garlic
- 2 tbsp lemon juice
- Salt and pepper to taste
In a large bowl, mix:
- 2 cans kidney beans, drained and rinsed
- 1 medium red onion, diced
- 1 each large red and yellow bell pepper, seeded and diced
- 1 cup parsley, chopped
Add and toss to combine:
- 1 tbsp olive oil
- 2 cloves garlic
- 2 tbsp lemon juice
- Salt and pepper to taste
