Kidney Bean Salad

Serves 6:

  • 2 cans kidney beans
  • 1 medium red onion
  • 1 each large red and yellow pepper
  • 1 cup parsley
  • 1 tbsp olive oil
  • 2 cloves garlic
  • 2 tbsp lemon juice
  • Salt and pepper to taste
  1. In a large bowl, mix:

    • 2 cans kidney beans, drained and rinsed
    • 1 medium red onion, diced
    • 1 each large red and yellow bell pepper, seeded and diced
    • 1 cup parsley, chopped
  2. Add and toss to combine:

    • 1 tbsp olive oil
    • 2 cloves garlic
    • 2 tbsp lemon juice
    • Salt and pepper to taste
