Serves 6
Rinse 350g soaked split peas. Cover with cold water. Bring to boil. Fast boil 20m.
Dice 2 onions. Sauté in cooking oil 5-10m.
Dice 3 carrots and 4 celery sticks. Add to onions, add ½ tsp cumin. Sauté 5m.
Prep 1¼ pt veg stock. Add to veg. Pour in split peas. Cover and simmer 40m (or till peas are cooked).
Add 3 tsp parsley and 3 tbsp lemon juice.
Blend half / all of soup, season to taste.
