Yellow Split Pea Soup

Serves 6

  • Cooking oil
  • ½ tsp cumin
  • 3 tsp parsley
  • 1¼ pt veg stock
  • 3 tbsp lemon juice
  • ½ tin coconut milk

  • 350g yellow split peas (soaked)
  • 2 onions
  • 4-6 celery sticks
  • 6 carrots
  1. Rinse 350g soaked split peas. Cover with cold water. Bring to boil. Fast boil 20m.

  2. Dice 2 onions. Sauté in cooking oil 5-10m.

  3. Dice 3 carrots and 4 celery sticks. Add to onions, add ½ tsp cumin. Sauté 5m.

  4. Prep 1¼ pt veg stock. Add to veg. Pour in split peas. Cover and simmer 40m (or till peas are cooked).

  5. Add 3 tsp parsley and 3 tbsp lemon juice.

  6. Blend half / all of soup, season to taste.
