Blueberry Energy Balls

  • 50g (6) pitted dates
  • 30g walnut pieces
  • 20g flaked almonds
  • 80g blueberries
  • 1 tbsp natural peanut butter
  • 2 tbsp unsweetened desiccated coconut
  1. Put all the ingredients (apart from the coconut) into the food processor and blend to a paste consistency

  2. Roll into small balls (I made 15) and coat in the coconut

  3. Place in fridge to harden
