Chickpea Burgers

Makes 6-8

  • 1 tin chickpeas
  • ½ red onion
  • 1 small courgette
  • Handful pecans/walnuts
  • 1 small bunch coriander
  • 3 tbsp red wine vinegar
  • 1 tbsp hot sauce
  • 2 tbsp peanut butter
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 2 tsp black pepper
  • ½ tsp sea salt
  • 1 cup quick oats
  • 2 tbsp olive oil
  1. Blend and add to a large mixing bowl:

    • 1 tin chickpeas
    • ½ red onion
    • Handful pecans/walnuts
    • 1 small bunch coriander
  2. Grate and add 1 small courgette

  3. Add, then thoroughly combine:

    • 3 tbsp red wine vinegar
    • 1 tbsp hot sauce
    • 2 tbsp peanut butter
    • 1 cup oats
    • 1 tsp cumin
    • 1 tsp garlic powder
    • 2 tsp black pepper
    • ½ tsp sea salt
    • 2 tbsp olive oil
  4. Form into 8 patties.

  5. Fry in a pan with some oil for 3-5 minutes a side.
