Makes 18

  • 1 tsp salt
  • 1 tsp baking powder
  • 2 tsp vanilla extract
  • 4 tbsp coconut oil

  • 1½ cups plain flour
  • 1½ cups light brown sugar
  • 1 cup cocoa powder

  • ½ cup applesauce
  • 60g Dark chocolate
  • 2 tbsp chia seeds
  • 60g Pecans / Walnuts

Oven at 175°C

  1. Line a glass baking dish (35x23cm) with parchment paper.

  2. Mix 2 tbsp chia seeds with 6 tbsps water and leave aside.

  3. Heat 4 tbsp coconut oil in a small pan.

  4. Chop 60g chocolate and 60g nuts.

  5. Combine in mixing bowl:

    • 1 ½ cups flour
    • 1 ½ cups sugar
    • 1 cup cocoa powder
    • 1 tsp each salt, baking powder
  6. Combine in jug:

    • melted coconut oil
    • ½ cup applesauce
    • chia seeds
    • 2 tsp vanilla extract
  7. Pour wet ingredients into dry, mix well, then stir in half the chocolate and nuts.

  8. Spread batter evenly in baking dish, pressing into sides with hands. Sprinkle with remaining chocolate and nuts and press.

  9. Bake for 40-45 minutes. Cool before cutting into bars.
